Educate me about rabbits

So we got our first bunny today. We were told it's a lionhead. There is a picture in the "moving bunny from indoors to outdoors" thread.

One thing I've noticed is that he is eating the Timothy Hay constantly! I haven't seen him eat the rabbit pellets at all. He's also drinking water so that's a good thing. Is it normal for them to eat a lot of Timothy Hay?
