Isn't there. I mangled it so badly when trying to eviscerate I just removed it entirely.
Not too happy about that, the skin is good. Maybe eventually I'll be able to get it right.

I would do Pastrami from the brest, schnitzel from the tie, and wonderful broth from the carcass.

@Fire Ant Farm guess what I did on Monday, after multiple years of procrastination, contemplation, and research? Mean rooster is now yummy dinner. 3.7 lbs dressed weight.
