You don't cut the neck off. Reach inside the throat with the knife cutting towards the neck bone on both sides. This will cut the veins and they bleed out. Bag holds them still without flapping or mess.

Yes it's very sharp. But I sharpen it every other bird or so. You can feel the difference when it's dull right away. I have tried every other way mentioned and this by far is the safest for me.
