I suspect that your thermometer is not sensitive enough for an accurate reading. Many thermometers are accurate at +- 1 or 2 degrees and they do not detect change quickly enough. That would make wonky readings because of that.

Something probably grabbed him' I have had hens disappear to return 3 weeks later with chicks. I also had a little Olandsk Dwarf rooster disappear for a few days, only to return with a pheasant hen.

When you say the temp on the bottom and top do you mean bottom and top shelves or do you mean bottom and top of incubator? I would take the temp on the shelves. Also what was the temp range?
