thinking about hatching some eggs from these two. Any idea what I’d get? Rooster is EE and the cuckoo/barred pattern hen at the top of the pic is an OE. Her eggs are a darker green with speckles sometimes.

I am not a breeder but I know that barred genes are pretty strong. I also know that most chickens crossed with ameraucanas/EEs end up bearded/muffed. In order to get OEs, you have to cross a blue egg layer with a chocolate egg layer. For this reason, you might get blue, chocolate, green egg-laying offspring (with the female offspring anyhow).
However, as I said, I am not a breeder (yet at least). The above is primarily speculation based off of information I have picked up.
Neither of these are pure breeds. My guess would be you would get some kind of blue/green egg. Ameraucanas are pure; Easter-Eggers are mixes. The fact that it would be a mix of mixes makes it difficult to get an idea of what they will look like/lay.
