Egg Burrito mmmm good (pix)

DH was "inventing" this morning in the kitchen. He used the following ingredients to create a great SW flavored mix that when paired with farm fresh scrambled eggs supplied by the "girls" made a fantastic breakfast burrito.

Pork - Sliced thin
Roma Tomatos
Green onion
Bell peppers - your choice of color
Asaparagus
1 package Taco Bell seasoning mix
Fllour tortillas
Sour Cream

Eggs mixed with a dab of half and half & scrambled.

Quick to fix, the whole process took less than 30 min from pan to table.

Sauted the pork along with some olive oil in the pan with the dry seasoning mix. When the meat was cooked added about 1/4 cup of water and the rest of the veteables ingredients holding out the asparagus. Steamed the asparagus in the mircowave first till just tender but still firm and then added to the sauted mix to flavor

Once the mix was cooked to taste

scrambled the eggs in a different pan.

Assembled the burrito by spooning in in the vegetable/meat mix with the eggs and garnished with a little sour cream. The wet sauce in the meat pan was seasoned enough to forego any salsa for me and I like spicy stuff.

I was going to make my usual pork enchiladas for dinner but this sounds so yummy I may sub it instead.
Just need to stop at the store for some asparagus...

I have pork shoulder steaks - what cut did you use?
 
For pan frying that is his favorite cut of meat too.. (pork steaks) he will also use country pork ribs (no bone) and slice thin.
