I am not sure exactly what you are looking for but here are some possibilities. You might also check out quiche and recipes that use a lot of eggs.
Hard boiled eggs, 1-2 for each person. Peeled and sliced.
Make a white sauce: (melt 2 TBSp butter in skillet, add 2 Tbsp flour, mix until smooth, add milk and cook and stir until desired consistency like a thick gravey) Add cubed or grated cheese and cook on low heat until melted.
Add sliced eggs. Pour over cooked rice and serve. Chopped roasted red peppers would make a nice garnish. Salt and pepper to taste before you pour it over rice. You can cook the rice in chicken broth and add a little bit of garlic and tumeric to make a yellow rice.
You can also boil the eggs and make deviled eggs and carefully put the egg back together. Put cooked rice in a casserole, place the eggs evenly on top of the rice, pressing them into the rice. Cover with the cheese sauce. You can heat it a few minutes in oven if desired.
Grease a large casserole pan. Break bread into bite size pieces and spread evenly over bottom. Add shreded cheese (you choose flavor and amount). Add cooked sausage, ham or bacon and spread over cheese. Mix eggs with fork (about 5 eggs) per 1 cup milk. Season with salt and pepper. Pour egg mixture over the other ingredients. Let this set a few hours in fridge (overnight is fine). Bake at 350 until cheese is melted and it is bubbling at edges, about 30 min for a 13 x 9 in casserole. ( You can chop some onions and red and green peppers and fry about 5 mins in butter and put this in with the meat...it makes it look more festive.)
Sorry, but I don't have recipes for either but they are both easy to do. The second one is good for a breakfast or brunch but equally as good for supper. hope this helps.
