one of my girls lays a large egg that looks white but when you wash it is is brown like the others she lays but when it drys it is whiteish again any guesses as to why

Well, I think it's just excess calcium. You didn't give much info, but if she's young, her body might be working out the process. If she's old, her body may be forgetting process. Then there is molting that interrupts things in strange ways sometimes. As you found out, they are perfectly safe to eat.
 
The bloom, or excess calcium, can change the egg color when wet.
Pics of it wet and dry would help here.
