Egg Foo Young recipies?

With laying getting into full swing, I was wondering if anyone knew how to make Egg Foo Young and the sauce? I love asian food and I wondered if anyone else cooked this?

I make egg foo yung all the time. I scramble eggs with sliced green onion, bean sprouts (canned if you don't have fresh) sliced mushrooms,whatever leftover veggies look good. Drop them in a medium hot frying pan in a little oil. I use a small gravy ladle.)When they start to set fold them in half and lightly brown both sides. For the sauce:In a small saucepan put about 1 cup chicken stock (canned is fine) 1 TB soy sauce and 1TB oyster sauce. I stir in about 1 1/2 TB corn starch and bring to a boil. Cook, stirring until the sauce thickens. If it gets too thick just add more stock. Hope this helps.
