I would like to know what the "formula" is to determine how many hens I need to get a certain number of eggs per day.

I think it all depends on the hens. We have 22 now and get 16-22 a day all depending on what they do. Most days we get 18. Some hens will lay every day other every other.
Maybe someone else will know more.
 
There are a lot of variables. If you want production layers, I think that would be Leghorns or Rhode Island Red related breeds (white or brown eggs respectively). But in a home flock there's a lot more leeway for other breeds that lay lots of beautiful eggs tho not quite as many as a top production bird.
