Egg Laying Pattern?

My first hen started laying eggs Jan. 2, while we have been having the absolute coldest weather in at least 10 years. I had given up on it, thinking she wouldn't lay until its warmer. She has laid eggs at different times of day, and has had an egg a day for three days, taken a day off, three more days with eggs, a day off, and has laid the last two days. Is this normal? All the eggs look nice and are close to the same time. (It's like Christmas morning every day we find one!)
 
It's pretty normal for first year layers to lay through winter. It got up to 0 degrees here in So. IL last Monday and out of my sixteen laying hens, I got around ten or so eggs, which is great considering the near-record temps. At first I thought I didn't collect the eggs the day before, but that was not the case! Needless to say, I was pretty amazed.

My 7 month old pullets started laying this winter too. It is normal for some breeds to not lay every day.
