Do they lay different colored eggs?

Aside from sorting them by egg color, I think you would almost have to watch them daily, whenever they went to lay....

A couple of other indicators are the bright red color of the comb will indicate a laying hen versus the pale color of a non-laying.

If you get hold of a chicken book there are examples/illustrations of the differences of the vent area of a layer and a non-layer. The layer will have large moist vent, flexible pelvic bones and set back legs among other characteristics. Probably the color of the comb is the easiest to identify. Color and size of eggs, visiting the nest box, and some physical charactistics are good signs to look for.
