Egg Quality?

The only luck I have had is using salt & vinegar. Usually even fresh ones peel pretty well. My green EE eggs always peel better than my Welsummers and I have no idea why.
 
I've never had an egg boiling process that has worked well. I've tried vinegar and salt and different methods but it doesn't seen to matter, I've also had "old" eggs that don't peel while I can use super fresh eggs and they WILL peel! How does that work lol
