How long can eggs stay in the nest box in arround 65 degree weather?

The reason I'm asking is I'm working out of town during the week and I have eggs that are 2 days old, are they still ok to eat after staying outside for 2 days?

Definitely. Fresh eggs actually keep very long. If you are gone a full week and come back, they will still be good.

you can always do the float test to see if they are spoiled-

take a bowl of water and if they float-toss them
if they sink they are fine.
