Here's one of my favorite company breakfasts to get you started off...
Apple-Egg Pancake
4 eggs
1/3 cup milk
1/3 cup flour (AP)
1/2 tsp salt
2 TBSP butter
1 tart apple, peeled, cored, and sliced very thin.
Preheat over to 375 degrees F.
Beat the eggs well. Add milk, flour and salt and beat until mixture is smooth. Melt butter in oven-proof iron skillet until bubbly. Rotate pan to coat with butter. Pour egg batter into pan. Spread apple slices over top. Bake uncovered for about 25 minutes. This will rise in souffle-like fashion. It's lovely. I've had guests pull out their cameras when it comes out of the oven! Serve dusted with powdered sugar...or for my family, cinnamon sugar. Totally yummy.
