egg safety question

If the eggs are put in water that is cooler than the egg, the egg will absorb some water through the porous shell, possible taking in bacteria. It also rinses some of the bloom off the egg. I'd use any eggs I tested fairly quickly. And I always break eggs into separate bowls before I add them to any recipe, just to be on the safe side.
