So, I live in the beautiful, and beautifully restrictive, state of CA. Apparently I have to register with the state
and grade all my eggs (not to mention package them and label them just so) in order to legally sell any. But the directions on how to grade are a bit vague. I understand the weight thing, but as for air cell and candleing I am a bit at a loss. There is a sheet with cutouts, I think I put the egg on the light and measure the air pocket--but do I have to look for anything else? How do I see the air pocket on the dark eggs? I have Marans that lay super dark brown eggs. Does anyone sell their eggs "legally" in Calif.? Am I on the right track? It seems like a whole lotta hoops, but that is normal for CA I think. Thanks
