My goose just started laying her first eggs on Sunday and this is the first time we have ever tried to incubate our eggs. How long can I collect before I set them? She has laid 2 since Sunday.

No idea with geese, but I've set chicken eggs that were from chickens that had just come in to lay, and they hatched.
 
If they were mine, I would collect 2 weeks worth and leave the rest for her to brood.
not sure I understand 2 weeks worth; do you mean gather all eggs she lays for first 2 weeks.
I have 2 White Chinese geese. found female in barn sitting as if she was injured so I rolled her over to see if she was injured but she was sitting on an egg (first time laying for her) she ran off, will she return and sit on egg or should I take it?

I would crack an egg and check fertility especially with a first timer. A goose will lay a clutch of eggs before she starts to sit so they all hatch at the same time. You interrupted her laying as she wasn't quite ready to hop off and upset her. She wasn't even considering sitting at this point.
2 weeks is the optimum amount of time an egg can sit around and still have a good hatch rate. Gather eggs and store them in an egg carton, turning then a few times a day yo help keep the yolk centered. You can put this first group in an incubator or if one goose does go broody, give them to her. Picking them up helps keep them cleaner. I never wash eggs. Date each egg. If you can identify who laid the egg, mark that as well.
