Hi everyone! I have a question about my eggs. They are very hard shelled, and are totally fine in all other aspects, but when I hard boil them, it seems that most of them gets these splitting cracks (like lightning looking) all over a few seconds or so after I put them into the water to hard boil them. I make sure each one isn't cracked at all before I put them in and I slowly submerge them into the water so it's not that they are cracking from hitting the pan. I don't get why this is. I have never had this problem with store bought eggs....

Room temperature eggs will be less likely to crack when putting them into boiling water than refrigerated eggs. If the eggs are cold they will most likely crack. If you set them into the boiling water without letting them clank on the pan bottom, say with a spoon, this will help also.

Other than that I really don't know. Hope the best for ya. Long live boiled eggs.

This is how I hard boil eggs - they never crack, and peel fairly easily (for fresh eggs).

Put the eggs in a saucepan & cover with cold water. Bring to a boil over high heat, uncovered. Gently stir the eggs once or twice in this time (it helps to center the yolks into the middle of the egg, which helps them cook evenly & looks prettier when they are cut.) As soon as they water is boiling rapidly, cover the pan with a close fitting lid & turn the heat off. Set the timer for 10 minutes.

After 10 minutes, drain the pan and run the cold tap into the pan for a bit. Drain the cool water from the saucepan, put the lid back on and shake it back and forth to crack the eggs well all over. Peel, and enjoy.

Try this method, hopefully you'll be pleasantly surprised.

IF you know in advance you will be boiling eggs, if you leave them out of the fridge overnight, it helps then "age" just a little, and they will peel more easily/
