We have Barred Rock Hens and none of them have been even the slightest interested in sitting on their eggs until now. We have a hen that just started being broody. She was being really aggressive when we took eggs from her until we decided to let her sit on 5 eggs which we marked. Once we left these 5 she now is no longer aggressive but every day we find 2 new eggs in her nest. We know she is not laying 2 eggs a day, so she has to be stealing another hen's eggs.

Is this normal behavior?
 
Yes, very normal. Most likely she has decided to be broody in the favorite nest box and it would not surprise me if another hen (or two) doesn't join her during the day some time to lay. When hens go broody they should stop laying to save their energy for keeping eggs warm. Good luck with the hatch.
