One of my family's favourite desserts is a home-made chocolate mousse. It calls for whipped egg whites mixed with whipping cream. These whites do not get heated at all. The yokes go in with hot melted chocolate so sort of get cooked. We have never had any problem using store bought eggs. I am assuming all is safe with backyard eggs too?

Yep! I have made mousse before using my back yard duck eggs, and it was fine! I shatter a link to the recipe? If so, would you mind sharing it with me! I am a big baker and love to experiment with different recipes!
Thanks. I don't mind sharing. I would have to write the recipe out a little more legibly first. It is one that my mother always made for family gatherings. My DH wants it for his birthday tomorrow. 😊

Ohh that is cute! Thanks so much! I am excited to make it! I love making mousse of valentines day or easter, and I used an egg whites recipe ounce, but I lost it, and now I can only find one with pure whipped cream, which is basically just chocolate whipped cream!

We make the same mousse but our recipe is a little bit different than what you described. It's delicious and so easy to make!

Ours is:
1 c chocolate chips
1 egg
1 t vanilla
Put those in a blender until the chocolate is all chopped fine. (We don't separate the egg, but I'm sure whipping the white and mixing with the whipped cream makes it extra thick and creamy - good idea!)

1 c heavy whipping cream - heat it until small bubbles appear but not boiling

Slowly stream the hot cream into the running blender and blend until smooth. Pour into 4 small serving dishes and chill for 3-4 hours.
