Eggnog question

Hi everyone!

I can't find this answer anywhere... I'm attempting my very first attempt at homemade eggnog since I have a surplus of eggs right now.

Should I use fresh eggs or cold eggs from my fridge?

Also, Is there a secret to separating the yolks? I have a feeling I'm going to really make a mess...
 
I have been wanting to make homemade eggnog for quite a while as well. Have you tried looking in the baker's thread? :)
I have! It seems pretty straight forward but that's never stopped me before from messing a recipe up!

I'm just wondering if the temperature of the eggs matter. Cold vs room temp.
 
Eggs are eggs, though the fresher the better. Because you're using raw eggs, you don't want to chance using eggs that are spoiled or old. Be sure the shells are clean before cracking them as well.
One thing to note: you'll want to chill your eggnog before serving, so if you're looking to serve it fairly quickly after making it, then you probably want the eggs already cold. Besides that, the eggs' temperature doesn't really matter.

That makes sense! Thanks! The oldest eggs I have are only 3 weeks old and they're refrigerated so freshness won't be a problem.
 
I've never separated the eggs for eggnog.:confused: I've never cooked the eggs for eggnog either (there are pics of mine a few posts above the recipe in that link.) I just use fresh eggs off the counter.

When I separate eggs, I just use my *clean* hands.

Sooo, are ya gonna share that recipe with us? 😅
