Eggrolls

I love those store bought wraps.

I have a Fry Daddy that I use to fry them.

The filling needs to be pretty dry though.

I also use the wonton wraps from the store, with a very small amount of filling for crab rangoons.

A shredded carrot is good, too, adds a bit of sweetness.

Your really don't need a recipe, as the proportions aren't all that significant, so I don't have one. The hassle is trying to get the quantities to come out even, and they never seem to for me, so I usually have frozen eggroll filling around. Just stir fry about half a pound of bulk loose sausage, shred half a cabbage or less, add the rest, taste it, and adjust to taste. And stick the leftover filling in the freezer as is.

I'm sure Allrecipes.com or Recipezaar.com have plenty of recipes to get you started, if you wish..

Here what I use for a receipe
8 cups dry cole slaw mix
1 large can of white chicken or shrimp
can water chestnuts chopped
1/2 cup bean sprouts
6 scallions chopped
2 stalks celery thinly sliced
2-4 tblsp soy sauce
2 tsp crushed garlic
1/2 tsp ground giner
1/4 tsp salf
dash pepper
THis makes enough filling to make the entire package of egg rolls
I have made these many times You can also bake them in oven if you don't want to fry them.
 
Our favorite eggroll stuffings include

shredded cabbage
shredded carrot (small amount)
chopped water chestnuts
chopped green onion
soy sauce, garlic, salt and pepper to taste

for meats we add cooked ground beef and a can of tiny shrimp - or chopped cooked chicken breast and a can of crabmeat.

We also freeze them. We get them about half cooked by frying, drain well. Then freeze. To eat them, we set them on cookie sheets frozen or partially thawed - and bake them at 350* until fully browned, also crisps them up nicely.

Do you need to stir fry the filling before you make the eggrolls? I always fry the pork first, but do you need to stir fry the cabbage before making the eggrolls? I cant remember how I used to do that.
