Eggs Expiration Date

A lady who gets me eggs at the local egg farm ( they are to small for market or blemished) told me that they are 6 weeks old before they hit the stores and then the stores best before date is usually another two weeks.
and they will stay better longer if you dont store them in the door but in the fridge

You can "float test"them.

Fresh eggs will stay at the bottom of a bowl of water. Eggs that have been in the fridge a while will angle up a bit, but will remain on the bottom. Eggs that float are old.

They'll keep longer in a styrofoam carton in the main part of the fridge than they will loose in the "egg holders" in the door, too. The egg shell is permeable; over time, the egg dries out, and keeping the eggs in a container slows this.
