Sometimes as eggs get larger the color lightens up because the same amount of pigment is applied to the egg no matter the size. Otherwise as mentioned, they run out of paint as the season wears on. Restocking of pigment happens during the molt generally.

My barred rock is laying some whopper eggs right now, and they are bone white, not her usual brown. She's a laying machine, so I'm sure she's getting ready to take a molting break soon.
