Eggs in Purgatory

Last night, I wanted a simple meal, as DP was working, and could not decide between eggs and pasta. Via the internet, I found this- http://whatscookingamerica.net/Eggs/Eggs-In-Purgatory.htm , and it was delicious! If you google "Eggs in Purgatory", there are many variations, but this was really simple and wicked good!

Basically, you are poaching an egg in tomato sauce. I wonder if I'll ever go back to eating spagetti without eggs again!

My Turkish friend used to make this as a breakfast all the time.
She sauteed green pepper & onions along with fresh tomatoes in olive oil, then plopped in the eggs to poach in the sauce.

Serve with feta cheese , olives and toasted bread plus plenty of strong black coffee.

Now I am nostalgic for her...and her wonderful cooking : (

Yum. I've made this and served over sliced and toasted Italian bread instead of pasta. It's a great way to use up a stale loaf. I've also added sauteed spinach or broccoli rabe for some healthy greens. Lots of romano cheese too
