We have 4 RIR hens and one BR rooster. We make a point to grab the eggs from the hen house in the early morning after the hens lay them. Sometimes we can't check or there are no eggs found before we leave for work and we check after we get home from work at 6PM. Of the 4 eggs layed each day some or all spent the day with no hen on top of them and sometimes some or all eggs had a hen sitting on them. Since it is summer now, is it safe to keep and eat the eggs that were collected later in the day whether they were sat on by a hen or not? Keep for a shorter time in the fridge compared to eggs collected in early morning?
