I think there are some breeds that are more consistent than others. I.e. - Leghorns. However, I'll just speak to my own limited experience. Of my four, my Barred Rock is the most consistent.

And, in case I read your post wrong, chickens don't lay more than one egg a day per chicken. (Of course, there are stories of some laying two in a day when they are young and just beginning...wierd things happen

)

my hens are all very young, they are all over the place. some days I get six some days I get none... depends on their "Mood". (and nutrition, weather, stress, ect...)
