There have been a few threads on here about this, but the ones I saw were a long time back. Some of those were about just stacking bales and covering them with a tarp. Not at all what you seem to be talking about.
The main issues I'd see with it are ventilation, which you mentioned, windows, and making very sure it stayed dry. Insulation would be tremendous and it would be very secure. And it would be great practice. I'd sure prefer to learn of the problems in construction on this scale instead of when you are building your house. When you see it in practice, you may decide it really is not for you.
I'm not convinced it is really as "Green" a way to go as you think, but then I've never done it. I will agree the insulating values would make it worth considering from a "Green"" viewpoint.
