Gotta remember that while a chicken, or even a turkey, may be easier than a cow, emus are a very large bird

It says they weight 62-82 pounds while a cow on the other hand is somewhere between 1600 to 2400 lbs

But they're also tall and just a big frame. You can't easily put them on a processing table like you can a smaller bird
