OK, everyone when it comes to entering a certain chicken I encounter this riddle I’m entering an Ancona but what the heck varieties do they have they just have one variety don’t they? What the heck am I supposed to type what variety the Ancona is?

I think Variety means Coloration. I haven't entered any of my birds yet, but would like to at some point.
 
Variety can mean a number of variations in the breed. Coloration, comb type, and frizzle are the most common "varieties" you find in breeds, but sometimes bearded or non bearded, or in the case of Silkies: naked necked.
