I was eating Pho with a Vietnamese friend the other day and noticed a sign on the wall: "Special Chewy Chicken Pho $7.99" this was a little more expensive than the regular chicken pho.
I asked my friend what is "Chewy Chicken." I thought it was a special way of cooking the meat, but he said no its actually the meat from older chickens. After he told me that I thought duh! He tells me that many traditional Vietnamese find Chewy Chicken a treat.
Since his parents live locally and do practice Vietnamese tradition I asked him if I could give my older layers to them as a gift so they could make their traditional Chewy Chicken Pho. He said absolutely. I very happy as it will be a win win situation.
I don't have to dispatch birds that don't taste good in my opinion, and his parents get fresh "chewy chicken"
