Okay, so not quite the same version you guys are thinking of. Whew!
My father is a pottery professor by trade. He used to have potluck meals at the end of term with his students, and his contribution to the meal would be to do Beggar's Chx. He just used a chicken from the grocery, filled it with carrots, potatoes, celery, herbs, etc. and then "wrapped" it in a huge slab of clay. It would then be cooked in a kiln or in a raku fire. I was pretty young though, so I don't remember how long it cooked or any other details. It was very moist and delicious though!
