And remember, the amount of water doesn't really matter. It's about the amount of surface area that water covers. More water will take longer to evaporate and give you a more stable reading.

The incubator held a steady %35 humidity lvl all night. :D
 
If you add water do use warm water that way it won't bring your temperature down
 
Candle whenever you want to. And don't worry too much about opening and closing the incubator. Hens get off the nest once or twice a day to eat, drink, and poop, stay off for at least a half hour. A few minutes here or there isn't going to hurt anything.
