excess eggs

how do i get rid of excess eggs? i have about 7 or 8 dozen bantam and stdrd eggs and i dont know what to do with them!

sell them
give them away
eat more of them (frittatas, omelettes, egg-and-sausage burritos, rice pudding, key lime pie, meringues, banana bread, etc etc etc)
freeze some, broken and stirred, for future use (tho I wouldn't do this til closer to wintertime, they don't keep well for >6 mo. or so)
scramble and microwave them and then feed them back to the chickens as an excellent protein source
scramble and microwave them and feed them in moderation to your cats/dogs
blow some (you can do any of the above with the innards) and make Easter decorations

Make an angel food cake! It takes 1 1/2 c. of egg whites! Then you could make a cooked mayo with the yolks!

If you can't sell them or give them away, definitely scramble them up and feed them back to your chickens. This will take a serious edge off your feed bill (though they may respond by giving you even more eggs tomorrow out of appreciation).

Whatever you do, don't start trying to use them all up in baked goods. Mom's doing that with my extras for some reason, and I've gone from losing weight to gaining weight :p

Sometimes the local food banks or churches will take them. I think that is a good option if you don't want to go thru the hassle of selling them or don't have a consistent enough supply of extras to make selling them worthwhile. You can also cook them up shells and all as a nice protien/calcium rich treat for your chooks. It's a nice problem to have, isn't it?

ETA: I make a lot of breakfast burritos too. They store well in the fridge for a few days and the kids love to microwave them for breakfast and after school snacks. I add whateve meat we have leftover from dinner, 1/2 cup or so of cooked onion, and a handfull of grated cheese--scramble it all up together and wrap it in a flour tortilla.

I bought a cookbook called The Good Egg and think it's fantastic. I've made lots of recipes and they've all been delicious. I really like the fact that the recipes don't all taste like egg - I mean there's more to it than just how to make an omelet or poach an egg. The spaghetti a la carbonara calls for 5 large eggs and gets rave reviews each time I make it.
