Yeah, go ahead and eat her at 16 or so weeks old and test your skills at butchering if you are new to that aspect of meat birds too. Being in an urban backyard, you may want to note that cornish x will take a bit of work to keep the smell down. Figure the amount of food in and wastes out from raising chicks till they start laying eggs all in the span of 8 weeks.
 
I just finished a few in an urban back yard and I highly recommend a movable tractor if you don't mind a bit of poo in the grass. Course with the drought we had this year, what's grass?

But really, moving them every day sure does keep the smell away. You can even wash the result into the dirt with a hose if you want.

, I wouldn't want to water the poop. LOL But I am in the soggy PNW where we water gardens once a week... maybe twice. I would send TX rain if I could.
