Farmers Market

One of the farmers markets near us has someone who sells duck eggs and BALUT eggs. (blech) You could probably sell your fresh eggs with less effort than prepared items.
Although, the Ten Egg Cake would sell well if you gave samples.

You could also go to the farmers market at the end of the day and trade fresh eggs to the other sellers for their products. By the end of the day they will make you a good deal for the produce that they havent sold. I used to trade silkie cockerels for 3 to 5 large boxes stuffed full of greens and other produce. Then after picking out some for the family, I fed the rest to the chickens, ducks, and geese. It really helped during the summer dry months.

There are two sets of rules you have to comply with, those of the farmer's market and those of your state's health department. Most farmer's markets allow you to sell anything produced on the farm, so both eggs and cake would be OK. In NY, my understanding is that small farms can sell their eggs with no packaging or other requirements, however, I believe there are some requirements for baked goods (labeling and perhaps kitchen certification). The easiest way to find out would be to call the person running the market or go during the market and ask others selling food products. Also remember that most markets require you to pay a fee and often you have to sign up for a whole season so you need to be sure it will be profitable. They will also often have limits on how many of a certain type of product can be sold, so it is good to get in early, though sometimes people drop out and they are looking for replacements.
