Fatty skin?

O.k., I have one more newbie question for you all. I processed 2 more cornish x's today. One dressed out at almost 6 lbs. My question is, he had a golden yellow layer on top of the skin. It looked like a fat layer to me, is that correct? It did scrape off when I was cleaning up the feathers.....the smaller chickens didn't have as much of it. Thanks in advance, and I promise there won't be too many more ?'s.

That's a thin, outer layer of skin. It makes the carcass look nicer if you lower the scald temp/ dip longer so it stays on.

You can also scrape it off with the back of your knife if you have areas where this is thick and unappetizing.
