Favorite dish featuring tomato's?

BLT sandwiches..
or you could cook a bunch of down into pasta sauce and freeze in batches for later in the year....
or... cook some of them down and add spices, brown sugar, etc.. other things to make a BBQ sauce..freeze for later in the year...

I also sliced and froze a bunch to feed my animals later in the year...
Got a dehydrator?? Dry some out to use later on in meals....
Ooh, you can also make fried green tomatos...

Picante sauce! I use about 12 cups of peeled diced tomatoes, 4 whole green peppers (chopped), 2 vidalia onions (chopped), a cup of cilantro, Jalapenos to taste, and add a tablespoon each of chilli pepper and cumin, mustard seed, celery seed. I simmer it for about 20 minutes and can the extra in pint jars that I process in a water bath canner for 5 minutes. Cans really well, too. Makes about 7 jars. I use this sauce in the slow cooker with chicken, which I then serve over rice. Makes a terrific sauce on the chicken!

Stewed tomatoes

Here's some green tomato and apple chutney:

2 lb apples (peeled cored and chopped)
2 cup water
1 tbsp mustard seed
2 lb tomatoes (chopped)
2 onions (chopped)
1 clove garlic cloves (chopped)
1/2 cup golden raisins
3/4 cup white sugar
1 tbsp curry powder
1 tsp cayenne pepper
4 tsp salt
2 1/2 cup apple cider vinegar

1. Place apples and water in a large saucepan. Bring to a boil, reduce heat, and cook 25 minutes, or until apples are tender, stirring occasionally. Add more water as necessary to keep the apples simmering.
2. Wrap mustard seed in cheesecloth, and place with apples. Mix in tomatoes, onions, garlic, raisins, sugar, curry powder, cayenne pepper, salt and vinegar into saucepan. Stir until sugar has dissolved.
3. Bring the mixture to a boil. Reduce heat to low, and simmer 1.5 - 2 hours, stirring occasionally, until a thick chutney remains. Remove and discard wrapped mustard seed. Seal chutney in sterile jars and seal in a waterbath for 15 minutes for 16oz jars.
 
Yeah, you can make a good salsa or picante sauce and can it... (not sure how the peppers and onions would freeze well?..) So you may need to can it.
 
I've eaten 25 tomatoes in the last 2 days...
I'm scared I'll start puking, but goodness, I crave homegrown tomatoes so hard later on... <3
So I load up ASAP and as much as I can!

I heard of a tomato salad but haven't tried it yet <3
Anyone got a good one? It's just sliced tomatoes, maybe some cucumber and etc. salt, pepper, etc.
 
I usually can a lot of mine, either the standard plain canned type, but last year I made a thick tomato sauce, almost paste. I just dumped a bunch of the skinned, seeded tomatoes into my crockpot until it was packed full, and then set it on low for a night and day. Canned it up, and used it through the year. It was delicious

Caprese Salad
Sliced maters
mozzarella cheese
olive oil and red wine vinegar
basil cut into thin strips
2 cloves crushed garlic

Mix it all and dive in. I had this for dinner tonight and will have it for breakfast tomorrow Yummy!
 
I love my tomatoes in a shallow pan, drizzeled with oil, spices and sprinkled with some parmesan/asiago and baked....sometimes I slice them before I bake, other times I just throw in whole, especially if they are the smaller tomatoes.
 
Tonight we had a layered dish with thin sliced tomatoes, eggplant, onions, garlic, fresh thyme, drizzled with olive oil and baked at 400 til it was a bit 'charred' on top. (A Lucinda Scala Quinn/Mad Hungry recipe). We ate the whole thing.

Also, especially Roma tomatoes, if you have a freezer, you can just freeze them whole in freezer bags. When you want to use them, run them under tap water and the skins will come right off - it's the temperature difference, just like if you had put them in boiling water. Very easy and fast way to keep tomatoes when you have so many!
