Feeding chickens with salmon remains

Hello everybody!
I work as a chef in a small restaurant in which we are also serving some salmon dishes. We cut our own fish that comes fresh from Norway and we don't use some pieces (tail, head, fins, bones and meat arond them etc.). The fish is very fresh and high quality becouse it is also served raw.

I tried to cook some fish and the chickens really like it. My question is if it is safe for them to eat it on a weekly basis and how much can I give it to them.

Read on here from a lot of folks that they feed their chickens salmon and it seems like they do it regularly; feed them what they catch and cook from their local pond/lake too. Use the search function on the site and see what I'm talking about.

Just have to be careful that you don't leave a bunch of meat product in the coop/run as it will can attract predators and will not decompose , causing a stink of rotten meat.
 
Hi, I started to give them some salmon but when I was observing how they eat it I found out that some of the chicken get big chunks and run away and some don't get any. After that I just started to cook fish with potatoes (ratio fish 1:2 potatoes) and I mashed the mixture and added alittle bit of layers feed and plenty of crushed corn. I added dry ingredients to make the texture a little bit more suitable for the hens. They were not able to tell what is fish and what are other things so they just ate everything. In the end there was just few bones left in the bowl.
I feed them around 50 grams of fish per hen once every 3 days and so far I everything seems to be fine. Thabk you for your help! :)
