Feeding plan...does this look okay?

I am finishing my coop this weekend and bringing home my girls early next week. They will be in a large run most of the time, let out to free range only when I'm home to supervise. Here is what I was planning for feed, please tell me if it doesn't look right.

Sprouted grain - going to try oats and barley or wheat
Kitchen scraps - fruits and veggies, crushed egg shells (are meat byproducts okay?)
High protein mash
Grit
Oyster shell

I also accidentally ended up with a monumentally huge crop of cilantro that I really don't want. Can I feed that to the girls?

They don't need high protein. Layer rations have 16% protein. I would not deviate too much from that and it should be their main staple.
 
I was hoping that they would eat the sprouted grain for their main staple and use the feed to supplement whatever additional nutrients, particularly protein, they need.
 
well it's up to you, but chicken nutrition is a science onto itself and unless you get it right you may see decreased egg production and health problems down the road. People at the big brands have done their homework in that regard and I don't think I can improve much on that. So I rely on commercial feed for the main diet.

But like I said, eventually you must do what you feel comfortable with.
