Fertilized eggs

I have 4 mature hens that lay eggs everyday. I have many younger roosters, but one is a little more mature than the others, and i see him mate on the hens frequently. How do i tell which eggs to leave in the nesting box and which ones to take?
 
Unless they are acting broody or like they are covering the eggs, pick them up and use or incubate

Incubate all of them? Or just incubate some?
 
Thanks! im new to chickens so still learning. What do i do if i incubate them and some of the eggs that i incubated turn out to be unfertilized?
