Finally Day 21!!

Super excited that tomorrow is day 21 for our 2 eggs that have been under broody mama and I have a few questions. What percentage of eggs hatch on day 21? When can I handle them once they have hatched? What if they don't hatch on day 21?

Also, any random tips would help greatly appreciated ( first time hatching chicks and having a broody)
