I did my first butcher today! I had a five month old rooster with a gimp leg so I decided to butcher it. I watched a few videos on youtube to learn how to do it. It went relatively easy. I just read something about letting them rest for a few days before cooking? I wish I would have read that BEFORE I cooked mine. I went from the cleaning table to the frying pan. It was a little tough, but good.
 
When we butcher we put them in coolers with ice for at least 24 hours. I have read different views saying anywhere from 4 hours to 4 days. The main thing is that rigor mortis sets in and then the meat will be more tender. With straight ice, 24 hours works great for us. It may take longer in a fridge.
