First Coop design....

I'm thinking of insulating with fiberglass and sheathing with OSB, it gets cold here. Both the North and South eaves are open at the top of the stud walls. I am thinking that these will need to be open, at least partially, during winter.

I'm wondering how to accomplish insulation of the ceiling, while still permitting adequate ventilation flow from Eave to Eave.
 
Insulation really not necessary,
nor will it do much good with the eaves open all winter(yes they should be).
 
Insulation with OSB might make the walls feel a tiny bit warmer with temperature swings but the eaves need to be open to allow the moisture to escape. If there is no draft the lower part may be a bit warmer than the upper part when the temperature drops until the cold sinks down to the bottom...
