First Fresh Chicken Dinner - Yummy!

Well, I did it! My Mom and I processed one of the roosters yesterday and we had fried chicken tonight. Best chicken I have ever eaten. It was tender and fell right off the bone. He was 20 weeks old. We fried it then left it on low heat - so it cooked for an hour.

Half of it we stewed for chicken and yellow rice. Got 2 cups of stock too.

Thanks for all your moral support and encouragement and help in looking at this. It made a big difference. Yesterday, I was calling him "meaty meaty treats" - I'd been calling him "Stew".

My mom said that he had the biggest drumsticks she'd ever seen - it was 6"-7" long. He was a big guy and there was more meat than I thought there would be.

The hardest part was killing him, I did that solo - my mom was inside the house. As my mom knew how to pluck and my uncle helped in cleaning out the entrails, the rest went easy.

I'm definitely sold on this. I'm sure that it gets easier each time that you do it.
