First quail egg!

My little quail are just 5 weeks old, and I found the first egg in their cage today! I wasn't expecting that quite so soon. Now I need egg handling and storage advice. Do you keep your quail eggs in the fridge? Its Summer here (in New Zealand) and its been hot - about 78 degrees F today - so I'm nervous to keep in them in the pantry. Though I keep grocery store chicken eggs in the pantry (which is how most people do it in this country.)

While I'm at it, any favourite quail egg recipes? Or egg cracking advice?
 
I’m from Australia and here we always just use the fridge so I can’t help with that but there are special siccors u can get the are used to cut the eggs open

Congrats on your first quail egg! Aren't they pretty? The shells are thinner but the membrane is thicker. I never have any problems cracking them - it just takes a little more effort to get through that membrane (your nails or a sharp tipped knife). I keep my quail eggs in the fridge. I just use quail eggs in place of chicken eggs (5 quail eggs are equivalent to one big chicken egg for baking purposes) and a good brownie recipe is great for using them up when you have an excess of eggs.

And as a coincidence I got my first quail egg today also... was a lovely surprise when I went to feed the birds in the aviary.

I had quails years ago and remember I always stored the eggs in the fridge.

They were delicious in a salad. Will have to wait a while this time though, till the other girls start laying also.

Congrats to you, too. Yeah I don't know when the others will start laying, or even if the one layer is going to be consistant so early on. So I might have to find something to do with just one little quail egg?
