Ralph: LOVE those pics and I am really glad that I am not alone having a stupid poopsicle eating dog! Haha!

I have only been getting about 3-5 eggs per day. Unfortunately, one of my silkies has decided to go broody I think. She hardly came out of the nest yesterday or today. She's not too bright. There are no eggs under her. The other thinks she has to be in there snuggling with her to help. Even more funny, my CX decided she needed to be there there to help all day too. Crazy girls! At least I got them all out to eat and drink.

I hate her eating poop! I have two dogs, mother and daughter. They both eat poop, but the dang black one (daughter) relishes it. If I let her outside for 2 minutes she runs to the birds to eat poop. You would think we starve her.

I wish I could put an end to it. My dogs are well trained and I can train them to do almost anything. They hunt, retrieve, sit, rollover, heel, flush, fetch. even bring us the phone, but I cannot get them to stop eating poop. I suppose the frozen poop is a tasty little treat....
 
Ok, Boredom and cabin fever are setting in. It is too cold to be outside much. I have to dress up like the Michelin Man to even get eggs.

I was looking on here for different recipes for chickens. I found only one thread for a sausage. I was just wondering if we could share the way we cook/fix our chickens here.


Last night my son and his wife were here, I made chicken for them (shockingly hard to believe, right?) My DW is gainfully employed so I end up doing the lions share of the cooking, of course I try to leave her enough dishes to clean so she still feels useful and needed.

Anyways, back to the supper, I made baked sweet potatoes, steamed green beans and chicken. I used my own recipe and it was great if I say so myself.

I rolled the chicken parts in Cajun spices, mainly a gob of different peppers, etc. Then I used grape seed oil in the bottom of a fry pan and browned the chicken a lot. I want it nearly burned. I had to brown the breasts on all four sides they were so thick.

Then I placed them in the oven at 425 degrees for 45 minutes.....

Even my daughter in law was impressed with them and asked how I made them!

I find baking them after browning gives the bird a pan fried taste without the grease/fat.

EVERY. SINGLE. DOG. We have ever had has enjoyed poop. Especially frozen poop for some reason. Be it horse, goat, rabbit or chicken, they find it irresistible.
Our current dog always smells like chicken poop and fermented feed. He is like a 2 year old. I tell him to stop, he does for one second, goes back to it. I tell him no again, same thing. By the third time he has assessed the situation and feels it is worth whatever the punishment for not listening and just relishes the "clean up". Dang dog.

Jessica- Your trio of "mother hens" is too cute! My silkie, Clyde, has yet to go broody. I was really hopeful she would so she could hatch eggs for me this spring. Not yet though.
Her sister, Bonnie, seemed to be broody late this summer just after they started laying, but it was egg yolk peritonitis. Sadly Bonnie didn't live.

Ralphie- I forgot to comment of your JJ story! He sounds like such an awesome turkey!! I bet the turkeys will win my husbands heart... who could resist?!

Sounds delicious! And quite the compliment being asked how you made them!
I agree on the browning! I brown almost every meat that I plan to cook in the oven or crockpot. It seals in the juices and adds so much more flavor!
I have a lot of "original" recipes that we have come up with for our birds, my husband and I are really pretty darn good cooks! If I do say so myself.

Our current favorite is smoke-a-que wings. With how cold it is there right now, it probably would not be something you want to do in your Michelin gear.

Another is bone in, skin on thighs with a lot of tarragon, garlic powder, onion powder, pepper and season salt. Season the skin to the point it is totally coated. Put them on a broiler pan and in a 350 degree oven. How long depends on how big they are, usually around 20-30 minutes. The skin gets super crispy, the meat is juicy. SO yummy.
Now, I know up north there, salt can be spicy to you all (hehe) so most of what I make will be very spicy

I am cracking myself up over here. My husbands family is from Duluth, mine from North Dakota... most everyone thinks we make very spicy food.
 
MountainMom there are only three spices up here:

Salt
Pepper
Ketchup.

Ketchup being the most valuable as it can be used as a soup, cocktail sauce, BBQ sauce and steak sauce without doing anything to it.

I will try your thighs, if I can find an exotic spice store to get the flavoring in!





JJ is whole reason I got any birds at all. My first thought when I got him was to raise a few babies and eat JJ...JJ can never be eaten now. It would be like eating my dogs! He really does follow us everywhere.

When it was warmer we would go for walks around the property, it would be my wife and I, our two dogs and JJ. He has walked a half mile with us and the dogs and never lags.



Tonight I am making black sex link rooster, stuffed with fruit and covered in butter, thyme, sage, rosemary and pepper. Then roasted. I will let my wife add the ketchup at the table. I am not looking forward to fixing him he has so many black pin feathers to get rid of.


We coded all the roosters by breed to see if we can tell a difference in taste/ texture or anything else. We will not buy BSL roosters ever again. They are small legged, and have too many dark feathers that do not pluck easily.

Ralph - That's so sweet of you to make sure she feels needed lol! The dinner sounds wonderful!

My favorite chicken recipe, and my plan for these birds, is a sticky roast chicken. I use this seasoning blend http://m.allrecipes.com/recipe/45954/roast-sticky-chicken-rotisserie-style/ I mix a lot at a time and store it in a big mason jar. I season, wrap it in plastic wrap and let it sit for 24-72 hours. Roast at 275 for 4-5 hours depending on the bird size. I only baste the last hour, maybe every 15-20 minutes. Serve with herb roasted potatoes and I'm in heaven. It is the only roast/baked chicken my family likes.

Well, tomorrow is butcher day for the meaties. So far, this is all I have done to prepare.




Oh, and I helped Pearl "escape". And take a trip to the salon... she LOVED the hairdryer.
