I love Cajun, I crave it, I try to make it and fail miserably.

Then I have to calm my nerves and try to relax with a few bottles of wine.
 
Raphie and Mountain Mom first of all, I don't do alligators, (anymore). AND what's worse is I don't do Cajun food. I'm from the North of La and we only do normal southern cooking.

Okay, now it's working. I can't talk without my smileys. Going to finish punching down my dough and bake me a loaf of artisan bread. Yum.

Well, I do love me some good ole southern food!

Ha! I would imagine that southern food still has more flavor than most of what North Dakotans consider flavorful!
I can make fun of people from ND, it's okay. My dad is from there, and I spend many a summer and a few winters in the "lovely" state.

The most delicious thing that I had from there (aside from my dad's amazing German recipes and anything my Aunt made, I think they broke the mold) was an Ufta Taco. Indian fry bread made into a taco. Yum. And cinnamon coke from KFC. But that isn't cooking, it is coke with cinnamon syrup (like hot tamale flavor).

This Thanksgiving we decided to go a southern/Cajun rout. It was amazing! Cajun smoked turkey, cranberry bacon pecan cornbread dressing, crawfish mac and cheese, and of course, pecan pie.

Why are you failing miserably at Cajun food? Even if it doesn't turn out, at least you get wine! I could certainly find solace there

Ya'lls are so funny and sweet. My smart phone is acting very.. not smart. And I'm sick..sick sick sick since before Thanksgiving.

My bf ordered the janoel 48, the hovabator 1588 and the biggest brinsea brooder heat plate for me for Christmas. I'm so eggcited to hatch eggs soon.

Stop talkin' 'bout gumbo.. because it's going to force me to make a big 'ol batch of it. My ex dh family lives in CenLa, but I spent 18 months living in NOLA and tried many a gumbo until I found one I liked that hit all my happy buttons. Now I make my roux gluten-free, and you can't tell.

I'm too sick to be making gumbo now.. dang it.

CX'S gone missing!

I cannot find them today. I see tracks out of their igloo, I see no predator tracks except a lone weasel track. Which I have set a little surprise for,,,,,

I checked the buildings as best as I could and cannot find them. I have so much stuff in the building they like to hang in it is impossible to check it very well.

I am hoping they are just hiding under a boat, washing machine, car, trailer or something...

I was going to move them to a more secure area and lock them up, but the weather was so nice and they enjoy free ranging so much.

I am not worried yet, tomorrow I will be.

Another excuse to sit by the fire and drink all day....

They were hiding on me. I found them this afternoon on the south side of the shed catching some rays!

What do you use to thicken your roux? I have found potato starch and tapioca starch to both work equally well! I use them now in all things I would have used flour to thicken. Things I was still making for my husband and denying myself (because cornstarch is really not the same). So happy to have discovered something that makes it just as yummy!

This spring when we meet up for our CX babies, whomever is not driving (since we are both not "allowed" to drive such distances.. meh) will make gumbo! Sound good?!

Can't wait to see all the babies you will be hatching!

Feel better! There are some seriously nasty bugs around this year. My family has all been down (I am the last to get it) with a feverish cold that just. won't. go. away. Awesome.
