Florida critters?

Hello everyone, I just lost my favorite hen to a predator and don't know what it is. I'm Concerned for my other hens. The predator only ate her soft tissue area (stomach,intestines). Her entire body was intact otherwise, no blood or scratches, no feathers missing. She was the best mother hen protecting her chicks fiercely. I believe she died protecting them. And all 3 survived. I found her about 15 feet from where she nested, close to the fence. Can anyone tell me what they think killed it? I have others to protect. Thx!
 
Probably opossum or raccoon. Was it at night? They weren't in a locked coop?
Lots of predators in Florida from weasels and snakes to panthers and bears.
